We’ve been at the back-to-school game for a few days now, and I would like to think I’ve been mildly successful so far. No one has been late, no one has forgotten their lunch, and everyone has had time to eat breakfast. It hasn’t always been the breakfast I wanted them to eat, but it’s been sufficient for our learning curve with this new routine we’ve all had to get used to (mom included)!
I’ve been scouring the internet looking for ways to get my kids excited about breakfast (and getting them to eat more than just cereal), and would you believe I totally forgot all about the awesomeness that is Eggo® waffles and pancakes?Eggo products make a quick, delicious breakfast or after school snack because they are ready to eat in minutes and are just right for little hands to hold. One of the easiest ways to get my kids to eat something is by making it look “fun” to eat. I came up with a fast, easy way to get a filling breakfast into their hands that they would actually want to eat. Follow the steps below for a recipe your kids will love too:
Sausage link or slice of bacon
1. Heat Eggo pancake according to instructions.
2. Cook sausage link or bacon according to instructions.
3. Once pancake is warmed, use a rolling pin to flatten.
4. Drizzle one side of the pancake with syrup or its equivalent.
5. Place sausage or bacon on one side of the pancake and begin to roll it up until it is fully rolled.
6. Add extra drop or two of syrup to pancake to hold “roll-up” together for on-the-go eating.
These Pancake Roll-Ups are simple to make and fun to eat, so of course they will be gobbled up right away. It makes me feel good to know that I’m getting my girls to eat a little more than they normally would in the mornings because I know that a full belly will fuel their bodies and minds to have a better day at school.
